CREAMY DIJON VEGAN VINAIGRETTE

Ingredients

  • 2 tbsp. red wine vinegar
  • 2 tbsp. olive oil
  • 1 tbsp. chopped shallots, or finely chopped onion
  • ¼ tsp. salt
  • 1 tbsp. Dijon mustard
  • 1 tsp. fresh basil
  • black pepper to taste

Instructions

  • Combine all ingredients in a blender. 
  • Blend until smooth.
  • Chill for 10 minutes before serving.  

NOTES

This recipe makes 2 servings… but you can easily scale it as needed.  If you make a bigger batch, it will last a week in your fridge.
