Pumpkin Pasta Sauce

  • 1 can of unsweetened pumpkin puree, 15 ounce can
  • 1 cup coconut milk
  • 2 tbsp ┬átahini
  • 1 green apple, cored and chopped
  • juice from one orange , (not bottled juice or from concentrate)
  • 2 tsp sage
  • 2 tsp cinnamon
  • 1/2 tsp ┬ánutmeg
  • salt & ground pepper, to taste


  • Heat the pumpkin, coconut milk and tahini in a large saucepan over medium heat.
  • Add the apple, and the rest of the ingredients.
  • Cover, and reduce heat to low.
  • Simmer for 25 minutes, stirring occasionally.
  • Puree soup in a food processor or a blender.
  • Return soup to saucepan and let simmer over low heat for 45 minutes.
  • Season with salt and pepper to taste.
